What gas gets you
Speed and control. The oven is ready before the dough has finished its second prove, the temperature holds steady while the door is opening and closing, and it shuts off completely when you are done. That is what makes a gas oven the one that actually gets used on a Tuesday rather than reserved for occasions.
What dual fuel gets you
A dual fuel oven runs on a gas burner for a weeknight and converts to wood for a weekend, using a conversion kit and a fire basket that go in where the burner comes out. You are buying one oven that answers both questions, at the cost of a little more setup either side of the switch.
Honest trade-offs
Gas will not reproduce the smoke flavour or the blistered leoparding that a live wood flame gives you across the top of the base. Purists notice it and most guests do not. You also need a propane cylinder and somewhere to keep it. If flavour matters more than speed, see wood-fired pizza ovens.
